    Fermentation and extended maceration for 26 days produced a young wine of intense color and fruit character. Aged in small oak barrels, 81% French (24%New) and 19% American (8% New) for 24 months resulted in cedar nuances and classic fruit flavours of dense blackberry and cassis fruit with a nutty oak finish.

    This wine is matured 11 months in small oak barrels 72% French oak and 28% American oak. The forward blackberry and blackcurrant flavours of Cabernet Sauvignon combines with the slightly smoky, spicy flavours of the Shiraz.

    The semillon was fermented in stainless steel and the Chardonnay in oak barrels to enhance the cool climate fruit flavours. Ripe apple and pineapple flavours of Semillon blend well with the citrus rich essence of Chardonnay fruit and are rounded out by just a hint of vanilla oak.

    This blend is matured 11 months in small oak barrels 68% French oak, 32% American oak. Zinfandel's ripe berry flavours combined with the powerful spice and blackberry character of Shiraz are complemented by subbtle vanilla oak complexity.

    Fermentation and maceration on skins lasted 49 days to achieve the desired fruit and tannin balance. The wine was racked in small oak barrels 63% French (23% New), 37% American (8% New) for 22 months to enhance complexity with barrel nuances. The resulting wine is delicious combination of blackberry and plum fruit with vanilla and oak facets.

    The bold character of the young wine required a high proportion (52%) of new barrels and 10 months in oak to achieve the correct balance. The extended ripening time from the vintage produced a big wine with ripe fruit characters of buttery apple and lime.

    The grape must was cold soaked for several days before fermentation began to enhance the fruit nuances and to develop richness. Racked into small French Oak barrels (48% New) and aged for 10 months. The medium toast Burgundian-style barrels lend vanilla and spice notes to the opulent fruit. The finished wine has rich red cherry notes with hints of black pepper and nutmeg to enhance the delicate mouthfeel.

    A gentle crush followed by a cold soak, fermentation and extended maceration on skins for 24 days allows development of deep colour, rich aromatics and soft tannins. The wine was racked in small French oak barrels (18% New) for 12 months. The wine exhibits bright, forwartd cherry, raspberry and blackberry jham fruit surrounded by black pepper, clove and mint spices.

    The Chardonnay was barrel fermented. The wine is aged eight months in 72% French oak and 28% American oak. The layers of rich tropical fruit, pear, citrus and apple complemented the vanilla, spice and coconut in the aroma and flavour. Rich texture and generous balancing acidity contribute finesse to both palate and finish.

    Stainless steel fermentation captures the fresh, aromatic Sauvignon Blanc character with 12% aged in small French and American small barrel. Primarily from Lake County grapes that gives flavours of ripe melon, gooseberry and pear. Crisp and refreshing with subbtle vanilla notes.

    Aged 13 months in 75% French and 25% American small oak barrels, medium toasted. Intense black fruit, raspberry and pepper aromas and flavors gain cedar and spicy notes from oak aging. Polished tannins and a lingering finish complement the wine's lush flavours.
